Collard greens require a lot of prep work – that is they need to be washed! During the busiest time of the year (June), we go through hundreds of bushels of collard greens. Can you imagine our head chef trying to prepare thousands of pounds worth of food but before that can be done, it all has to be hand washed 3 times! It’s a hot mess!
