There are endless ways to BBQ chicken. We’ve been using the same recipe & procedure here at Dixie Bones since we opened in 1996. It consists of using a simple dry rub & smoking chicken in the pits at 325° degrees for approximately an hour & 15 minutes.
Sometimes we get questions about why our meat is “pink”. Some people are worried that it has been undercooked. The pink is actually from the smoke of hickory logs. Smoking meat using hickory tends to give it a pink color. We assure you that the pinkness is harmless & that our meat has been thoroughly cooked & tastes quite amazing.
